How to convert cups to grams

A cup measures volume and a gram measures weight, so the conversion depends on how dense the ingredient is. A US cup of all-purpose flour weighs about 120 g, a cup of granulated sugar about 198 g and a cup of butter about 227 g. Pick your ingredient above and the tool does the multiplication. For oven temperatures, the chart covers gas marks 1/4 to 9 with the matching °C and °F.

Common questions

How many grams are in a cup of flour?

About 120 g for a US cup of all-purpose flour. Baking charts range from 120 to 140 g depending on how the flour is scooped, which is why weighing is more accurate than measuring by cup.

Why does a cup of sugar weigh more than a cup of flour?

A cup holds the same volume of everything, but sugar is denser than flour. The same space holds more grams of sugar, so each ingredient needs its own conversion.

Is a US cup the same as a metric or UK cup?

No. A US cup is 236.6 ml, a metric cup is 250 ml and the old UK cup is 284 ml. Choose the one your recipe uses, because the difference is about 6 percent between US and metric.

What is gas mark 4 in Celsius and Fahrenheit?

Gas mark 4 is 180 °C or 350 °F, a moderate oven used for most cakes and biscuits.

How do I convert a recipe for a fan oven?

Fan ovens circulate hot air, so they cook faster. Lower the temperature by about 20 °C (25 °F) from the conventional setting in the recipe.

Are the ingredient weights exact?

They are typical values taken from published baking charts and physical densities. Packing, humidity and brand change real weights, so treat them as a reliable starting point.
